Structure and Menthone Encapsulation of Corn Starch Modified by Octenyl Succinic Anhydride and Enzymatic Treatment

In order to improve the ability of starch absorb menthone, corn was modified by enzymatic treatment (amyloglucosidase and ?-amylase) combined with octenyl succinic anhydride (OSA) esterification. The oil absorption rate followed OSA (P-OSA) reached 101.33%, whereas that samples reverse action sequences (OSA-P) only 59.67%. degree substitution OSA-P also generally lower than P-OSA. At high addition, had a smaller specific surface area fewer pores because (OS) groups impeded treatment. Compared OSA-P, lamellar structure P-OSA is sparser less ordered. Owing its pores, beneficial for reaction occur inside granules, which observed Raman spectroscopy laser confocal microscopy. loading menthone could reach 64.34 mg/g.
